                                Great fillet knife

                                These knives are great for breaking down fish. I use it with scissors and scaler. But this will do the bulk of the work and skinning. I really enjoy how easy it is to sharpen, soft steel. And I've found a place for it on my kitchen counter for cutting up fruit. And if it gets dull, get another.
